Cooking Notes

Serves: 3 cups

Time: 1/2 hour

Ingredients

  • 300 gms ~ 50% to 70% Dark Chocolate
  • 6 Tbsp – Cocoa Powder
  • 6 Tbsp Brown Sugar
  • 2 Tbsp Corn Flour (optional – use this only of you want a thick hot chocolate)
  • 2 to 3 dried Red Chillies
  • 1 stick Cinnamon
  • 3 and half cups of milk

Directions

  • Chop the chocolate finely
  • Put the chocolate and cocoa powder in a heavy bottom pan and allow it to melt on slow flame
  • Once it melts – add the sugar, dried chillies, cinnamon stick and milk
  • Heighten the flame to medium and bring to a slow boil
  • At this point, mix cornflour with a little water to give it liquid consistency.\
  • Pour the cornflour slushy into the chocolate mix and reduce the flame to the lowest heat
  • Let it simmer for about 15 to 20 minutes
  • Once done, pour the hot chocolate through a strainer to remove and discard the chillies and cinnamon stick
  • Top your hot chocolate with marshmallows or white chocolate shavings

Make sure you don’t overheat the milk. You want it to just have bubbles on the sides, about 180 degrees. You do not want the milk to boil.
