Cabbage Rolls with Dipping Sauce

Probably the only way I can get my husband to eat Cabbage – successfully. We need to get innovative with feeding children and the husbands. This Cabbage roll is simple, quick and easy to make. The beauty of this dish is that you can simply enjoy the cauliflower rice all on its own or if meat is your jam then you can add a well marinated mince mixture.

Serves: 3 people

Time: 40 minutes 

Ingredients

 Cabbage Rolls

  1. One Cabbage (any color will do)
  2. Half of a small Cauliflower
  3. 1 small Onion finely chopped (optional)
  4. ¼ cup chopped Mushroom
  5. ¼ cup Carrot
  6. ¼ cup Bell peppers (I use all 3 colors)
  7. 1 Tbsp Butter
  8. 2 Tbsp minced Garlic
  9. 3 finely chopped Chillis
  10. 1 tsp Soy Sauce
  11. 2 tsp Pepper
  12. Salt to taste

Dipping Sauce

  1. ½ tbsp Sriracha Sauce
  2. ½ tbsp Soy Sauce
  3. 1 tsp Fish Sauce (optional)
  4. ¼ tsp honey
  5. 1 tsp lemon juice
  6. 1 tsp vinegar (I used red wine vinegar)
  7. Salt to taste

Directions

  1. Cut and blitz the cauliflower in a food processor to a coarse, grain like texture.
  2. Soften the cauliflower in boiling water like you would cook rice. This takes around 10 to 15 minutes.
  3. While the cauliflower grain is boiling, cut vegetables as mentioned, except for the cabbage.
  4. Core the cabbage as shown in the video and put it in a pot of boiling water, place it with the core facing down. This should take around 10 minutes.
  5. Once your Cauliflower rice is done – drain and let it sit, while the veggies get stir fried.
  6. Place a pan on medium heat and add butter to it, once the butter melts, add the minced garlic.
  7. Sauté the garlic until the raw smell goes off and you get a fragrant aroma.
  8. Add onions and green chili and sauté until light brown.
  9. Don’t forget to check on your cabbage to check if it has softened
  10. Add the carrot and let it sweat, then add the rest of the veggies. You can leave a crunchy texture. Remember we will be steaming them!
  11. Toss in the blitzed cauliflower and stir it, adding in the salt and pepper. Add the Soy sauce just before turning off the stove.
  12. Now back to the cabbage – remove it from boiling water gently and remove the leaves of the cabbage.
  13. Flatten them and give a slight cut in the middle, if required. Put a spoonful of the cauliflower rice in the cabbage leaf and roll it.
  14. Steam the cabbage rolls for 30 minutes on medium heat.
  15. For the Dipping sauce just mix all the ingredients.

What you need to be careful of is taking care of your fingers while you are coring the cabbages and removing the layers as they boil.
